Oven Roasted Chanterelle Mushrooms

This is a very simple recipe that requires really high-quality whole fresh mushrooms.

Roast Mushrooms

  • 1 lb chanterelle mushrooms washed and patted dry
  • 6 cloves garlic sliced thin
  • 2 tbsp chopped fresh thyme
  • Olive oil
  • Salt/pepper

In a large baking dish mix everything together. Roast at 375 degrees until crispy, about 30-45 minutes.

    It is a little hard to believe, but I never cooked chanterelles at home… not even when we lived in Paris and could buy the very best. I must repent. 😉

  5. Gorgeous – this reminds me of an Ottolenghi recipe. I think he pan fries then squeezes some lemon juice over them at the end. Either way, fabulous!
