This is a very simple recipe that requires really high-quality whole fresh mushrooms.
Roast Mushrooms
- 1 lb chanterelle mushrooms washed and patted dry
- 6 cloves garlic sliced thin
- 2 tbsp chopped fresh thyme
- Olive oil
- Salt/pepper
In a large baking dish mix everything together. Roast at 375 degrees until crispy, about 30-45 minutes.
I’d eat this for dinner with some crusty bread !! I’ve never bought/cooked chanterelles – can you give me some tips? ; o )
The mushrooms should be firm with little or no discoloration at the base. Watch out for any soft spots on the caps and try to get the whole mushroom, stem and all.

It is a little hard to believe, but I never cooked chanterelles at home… not even when we lived in Paris and could buy the very best. I must repent. 😉
Gorgeous – this reminds me of an Ottolenghi recipe. I think he pan fries then squeezes some lemon juice over them at the end. Either way, fabulous!
