Roast Chicken

OK, the cheese does make it less healthy.

This is one of my go-to quick dinners. Chop some vegetables, toss in olive oil, add a couple chicken breasts and roast for about 45 minutes at 365 degrees. The nice thing about it is whatever root vegetables are on hand will work. Season with whatever fresh spice floats your boat, or use dried and make a rub for the chicken. If you want to go fancy, just add leaks, fennel and whole garlic cloves instead of chopped onion and minced garlic. Top with cheese once almost done and finish roasting for a slightly less healthy option.
