Grilled Eggplant and Zucchini Stacks

What I wish a Big Mac looked like

This is a great side with burgers or steak. Change the spice in the marinade to your taste. I like Tapatio.

Grilled  Eggplant and Zucchini Stacks

Marinade

  • 1/3 cup olive oil
  • 1/4 cup dry white wine
  • 1 tbsp cider vinegar
  • 4 dashes hot pepper sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped fresh basil
  • salt/pepper

Whisk everything together.

Stacks

  • 1 eggplant sliced 1/4″ thin longways salted and weighted for 1/2 hour
  • 1-2 Zucchini sliced 1/4″ thin longways
  • 2-3 tomatoes sliced thick
  • 3 shitake mushroom caps sliced paper thin
  • 2 cloves garlic minced
  • goat cheese
  • salt pepper

Brush marinade over eggplant and zuchini. Let stand for at least 30 minutes. Grill slices over direct heat until browned on both sides, about seven minutes. Meanwhile in a large frying pan melt 1 tablespoon butter and fry mushrooms until browned. Add garlic and cook for a minute more. To assemble spread goat cheese over an eggplant slice. Top with some mushroom. Top with tomato then zucchini. Spread more cheese on zucchini, then repeat mushrooms and tomato. Top with an eggplant slice. Serve hot or cold. The left over marinade can be drizzled over them as well.

About Rufus' Food and Spirits Guide

This blog attempts to collect some of the things I try to create with food and booze. Sometimes I succeed and sometimes I fail. My hope is to entertain and maybe help people think a little harder about what they decide to eat and drink.

  9. Sissi says:

Amazing photo! I think this one is my favourite on your blog (until know)! At first I thought it was a photo of fancy éclairs 😉 (I don’t know if they exist in the US…). I should put this recipe on my “dishes to try” list!

  10. Sissi says:

I meant “until now”, sorry. I should stop talking to myself in my head when I write 😉

  11. Skip the burgers and steak – these are good enough to eat all on their own.

Love all these flavors! Well, I’d probably skip the eggplant, but the idea of grilled zucchini, tomatoes, mushrooms, garlic, and goat cheese … drooling just a little.

  23. Fantastic recipe! Oh, if Ritchey were looking at this he would be salivating! Everything he loves in one stack! And we have zucchini and tomatoes from our garden to use!

    Grilled zucchini is yummy!

  27. TasteFood says:

Beautiful! Food tastes so much better when stacked.

  28. sallybr says:

Lovely! I used to make a similar type of recipe that involved grilled eggplant, tomatoes, and polenta disks. The veggies were cut on a round shape, and the polenta of course made it all a lot more substantial. I like your version better…

  29. Karen says:

Grilled vegetables are so great. Looks like you were at the farmers market also.

  30. I love grilled veggies! Great photo too! Are these from your garden?

  31. eva626 says:

OMG, that is my dream big mac TOO!!!

  32. JamieAnne says:

  33. spiderpaw says:

This looks great. I have a big cookout on schedule and I think I’ll make this for the vegetarians on hand. Thanks.

  34. Stefanie says:

Looks gorgeous and sounds tasty! I made something with a similar vegetable combo the other night 🙂

  35. That’s my kind of sandwich! Your marinade sounds delish and I’ve got a little bit of hot sauce to play with!!

  36. Kas says:

“What I wish a Big Mac looked like.” LOL! 🙂 America in particular would be a much healthier place if that’s what Big Macs looked like … and your version is infinitely tastier as well!

  37. Kristy says:

All of these awesome eggplant recipes…I’m going to be making eggplant for weeks at this rate! (Not that I’m complaining. LOL!)

  38. Looks/sounds great. I’ll take at least two for dinner please.

  39. randommanda says:

This looks delicious! How does the eggplant hold up though? I’ve wanted to make more recipes with eggplant, but the husband tends to think they’re too mushy, normally.

  40. Beautiful photography and a very creative recipe!

  41. Eggplant mushroom lover’s heaven!

  42. spicegirlfla says:

Mmm… this is my kind of food!! Love that you used the goat cheese, I like that the best with grilled veggies!!

  43. What an awesome photo! I loved grilled vegies. Shitakes are such a favourite too, this would be delicious!

  44. Eggplant is one of my favourites – I buy an eggplant dip often and use it to smear on burgers, so I can imagine how lovely this would be as a side to a steak. And I cannot say no to vine ripened tomatoes – is there anything better in the world? Maybe this stack is it…

  45. Charles says:

Beautiful, Greg. I’ve made a similar thing before and put some sliced camembert and minced chilli in the centre… I find I need to stick them through with skewers, club sandwich style though as they topple over otherwise 😀

  46. ambrosiana says:

Beautiful looking stack! Love the marinade!! Great picture!
