These are really simple and any dried fruit combination will work. I just happened to have dates and cranberries on hand.
Oh and they are pretty healthy as well.
Carrot Muffins with Dried Fruit and Honey
- 1 cup flour
- 1 cup whole wheat flour
- 1 cup shredded carrot
- 1/2 cup dried dates
- 1/2 cup dried cranberries
- 1/4 cup honey
- 2 tbsp cinnamon sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/3 cup oil
- 1 egg
Beat egg with honey, milk and oil until well blended. Mix everything else in a bowl and create a well in the center. Pour in liquid and mix until a thick batter forms. Grease two muffin tins and spoon batter equally into all twelve holes. Bake at 400 degrees until a toothpick comes out clean from the center, about 20 minutes.

i’m just off to the kitchen to make some cakes for this evening’s tea time. These might have to be added to the existing plan. Nice one. I’m never sure about carrot in cake, but I’ll give it a go.
