Grapefruit Vinaigrette

This needs fresh grapefruit juice

This needs fresh grapefruit juice

This is a very simple healthy salad dressing. It has to have ripe red grapefruit to taste right.

Grapefruit Vinaigrette

  • 2 tsp Dijon mustard
  • 8 tbsp extra virgin olive oil
  • 4 tbsp fresh grapefruit juice
  • 1/2 tsp minced garlic

Whip everything together and refrigerate for an hour before serving.

About Rufus' Food and Spirits Guide

This blog attempts to collect some of the things I try to create with food and booze. Sometimes I succeed and sometimes I fail. My hope is to entertain and maybe help people think a little harder about what they decide to eat and drink.

When we move to Florida, we will be in the heart of the grapefruit growing region. I can’t wait to try this vinaigrette then. 🙂
