Avocados are kinda in season

This simple salad is a perfect side for grilled meats or burgers. Don’t skimp on the cheese.

Avocado and Chickpea Salad

  • 3 cups cooked chickpeas
  • 1 red bell pepper diced
  • 2 avocados cubed
  • 3 tbsp diced green onion
  • 4 oz crumbled feta
  • juice from 1/2 lemon
  • 1 tbsp olive oil
  • salt/pepper to taste
  • 3 tbsp chopped parsley

Combine all ingredients in a large bowl. Adjust seasoning. Refrigerate until ready to serve.

    So fresh looking too. We love feta and have really made it a point to only ever get real Greek feta which is surprisingly difficult to find here.
