This sandwich requires very fresh tomatoes and basil.
Grilled Balsamic Chicken Caprese Sandwich
- 1 chicken breast butterflied, cut in half and pounded out to 1/4″ thick
- 1 tbsp chopped fresh thyme
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 8-12 large basil leaves sliced into thick slivers
- 1 tomato sliced thick
- 2 thick slices fresh mozzarella
- Sub roll
Mix balsamic, oil and thyme in a bowl. Season chicken with salt and pepper and then marinate in mixture. Prepare grill and cook chicken brushing with marinade. Toast bread and then layer chicken, tomato, cheese and basil. Drizzle with olive oil and place bun on top.
