Chicken Marinade #9

Wings and legs

Wings and legs

This is an easy marinade that comes together quick and is ready for the grill after 30 minutes. This would work well for fish as well. Fresh mint is not optional.

Cilantro Mint Marinade

  • 1/2 cup mint leaves
  • 1/2 cup cilantro leaves
  • 1 lime zested and juiced
  • 2-4 tbsp olive oil
  • 1/4 cup sherry
  • 2-3 large cloves garlic

Put everything in a blender and process until smooth. Pour over meat and refrigerate. Let marinade sit for at least 30 minutes and up to 2 hours before cooking.

About Rufus' Food and Spirits Guide

This blog attempts to collect some of the things I try to create with food and booze. Sometimes I succeed and sometimes I fail. My hope is to entertain and maybe help people think a little harder about what they decide to eat and drink.

Mint and coriander!! Yum! Sounds absolutely delicious… and yes, I totally agree that dried mint does not compare to fresh.

I like your combination of flavors. We are heading to Maine for the weekend and I’ll be grilling…thanks for a new marinade.
