This is an easy marinade that comes together quick and is ready for the grill after 30 minutes. This would work well for fish as well. Fresh mint is not optional.
Cilantro Mint Marinade
- 1/2 cup mint leaves
- 1/2 cup cilantro leaves
- 1 lime zested and juiced
- 2-4 tbsp olive oil
- 1/4 cup sherry
- 2-3 large cloves garlic
Put everything in a blender and process until smooth. Pour over meat and refrigerate. Let marinade sit for at least 30 minutes and up to 2 hours before cooking.
Yum! Nice change from the usual soy and honey! 🙂
