Couldn’t wait to take a bite

We’ve been buying a flat of strawberries at the farmers market the last two weekends and trying to put them to good use. Berries are gone in the blink of an eye, and these muffins will be too.

Strawberry Buttermilk muffins

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3 tsp baking powder
  • 1/2 cardamom
  • 1/2 tsp salt
  • 1 1/4 cup buttermilk (see note below)
  • 1 egg
  • 2 tbsp melted butter
  • 2 cups strawberries, diced

Preheat oven to 350. Grease bottoms of 12 regular muffin pans. In a large bowl, combine dry ingredients. In a smaller bowl, combine buttermilk and egg, beat well. Add to flour mixture and stir until just moistened. Stir in berries. Divide evenly between greased muffin cups. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on rack, but not too long. They’re better warm.

Notes: If you don’t have buttermilk, you can put a tablespoon of lemon juice or vinegar in your measuring cup and fill it the rest of the way to the one cup mark with regular milk. Let stand for five minutes before using. Since regular milk is thinner, use just one cup not 1 1/4 cups.

    These look delicious… bite-sized (well, maybe a few bites) little cakes of berry deliciousness! Did you put both strawberries and blackberries in these G? I love anything with buttermilk, it makes the crumb so tender and moist.

    For new bakers, I might want to include instructions to dice or slice the strawberries as there’s no mention of that in the recipe. The muffins look bursting with fruit …so lovely.
