If you even think it then there needs to be more cheese

This is a great way to use up some leftover crawfish meat from a boil. Any mix of cheese can be used, but equal parts swiss, mozzarella and cheddar work best.

Baked Crawfish Macaroni

  • 5 tbsp butter
  • 1/3 cup flour
  • 2 1/2 cups whole milk
  • 1 bay leaf
  • 1/2 tsp old bay
  • 1 cup onion finely chopped
  • 1 cup mushrooms sliced fine
  • 1 tbsp fresh oregano
  • 1 cup cooked crawfish meat
  • 1 lb elbow macaroni
  • 3 cups total shredded swiss, cheddar and mozzarella
  • 1/2 cup romano grated fine
  • 1 tsp truffle oil

Boil pasta to al dente, drain and set aside. Heat olive oil in a frying pan over medium low heat and saute onion and mushrooms until golden and soft. Combine with pasta and then mix in truffle oil. Warm milk with old bay and bay leaf. In a stock pot melt butter over medium heat. Add flour and stir until rough turns dark golden brown. Discard bay leaf and add warmed milk. Whisk until sauce becomes thick and creamy. Add Romano and 3/4 of shredded cheese to sauce and stir until smooth. Pour three-quarters of sauce over pasta and mix well. Season with oregano, salt and pepper. Spoon pasta into a greased baking dish. Pour remaining sauce over the top then sprinkle on leftover cheese. Bake at 365 degrees until cheese is melted, about 15 minutes. Let stand ten minutes before serving.

    I think I’d get crawfish JUST for this recipe! I had a taste of lobster Mac ‘n Cheese years ago when we were down in Florida and it was awesome, so I can well imagine how good this one would be.
