Use some bread to mop up the extra dressing

This dish makes use of hard-cooked egg yolks to make a Caesar-like dressing for asparagus. The olives add a bit of salt and tang. Serve warm or at room temperature. Open a vino verde for an indulgent, but not too heavy, lunch for two. Or serve as a side for a barbecue.

Asparagus with Eggs and Olives

  • 20-25 asparagus stalks
  • juice from 1/2 lemon
  • 2 hard-boiled eggs (Chop whites, set yolks aside)
  • 1/4 cup chopped green olives
  • 1/8 cup olive oil
  • 1/2 tsp Worcestershire sauce
  • 1/2 tbsp white wine
  • 2 anchovies
  • black pepper

Cook asparagus in boiling water until just done, about two minutes. Remove and run under cold water. Place on serving platter. Mince anchovies in a medium-sized bowl. Whisk in juice, oil, Worcestershire sauce, egg yolks and wine until smooth. Stir in olives and egg whites. Drizzle over asparagus. Season with fresh ground black pepper.

    Alright…this is the second post in one day for me with asparagus and eggs. It’s a combo I never thought of, but now can’t stop thinking about. Too delicious!

  3. I do a similar but simpler dressing. Just hard boiled egg yolks, olive oil, salt and pepper. I like the idea of adding olives and anchovies.

    It makes perfect sense because of asparagus and hollandaise sauce. What a lovely lunch for sure.
