Avocado is good in anything

Avocados have been on sale a lot lately and we can’t seem to buy enough. This creamy dressing is great over kale especially.

Avocado Salad Dressing

  • 1/2 an avocado
  • 1/4 cup non-fat Greek yogurt
  • 1/4 cup extra virgin olive oil
  • 1 tbsp rice vinegar
  • 1 tbsp chopped cilantro
  • 2-3 tbsp white wine
  • salt/pepper

Mash avocado and whisk in oil, yogurt and vinegar. Add just enough wine to thin it to the consistency you want. Stir in cilantro and season to taste with salt and pepper.
