We have a lot of grapefruit on hand and this vinaigrette is simple and uses up a bit of juice. It works best over  greens that are slightly bitter, like kale and arugula, with sliced avocado. If the grapefruit is not as sweet as ours then add a bit of honey to the dressing. This will keep for a few weeks in the refrigerator.

Grapefruit Vinaigrette

  • 1/2 cup grapefruit juice + 1 tbsp
  • 4 tbsp extra virgin olive oil
  • 1 tbsp finely chopped fresh cilantro
  • Salt/pepper

Mix everything together and then adjust seasoning to preference.
