These make a great side dish and are very simple to put together. Any color pepper will work but an assortment is just more fun for everyone.
Polenta Stuffed Peppers
- 4 large bell peppers
- 1/2 batch of polenta
- Olive oil
Cut the tops off each pepper and deseed. Make sure to save the caps. Grease a baking dish and the inside of each pepper with olive oil. Season with salt and pepper. Make polenta and spoon it into each pepper pressing it in with a spoon. Place tops on each pepper and bake at 365 degrees until peppers are cooked and beginning to wilt, about 25 minutes. Serve hot.
