Curry crazy up in this house

This is what to do with the last okra of the season. Or fry it. (The recipe was inspired by one in Curry Easy.)

Chicken and Okra

  • 4 chicken thighs cut into bite sized cubes
  • 1 tbsp minced ginger
  • 1 tbsp chili powder
  • 1 tsp sea salt
  • 1 tsp turmeric
  • 1 tsp ground cardamom
  • 1 tsp cumin seeds
  • 1 1/2 cups finely diced onion
  • 3 tomatoes diced
  • 1 jalapeno diced fine
  • 15-20 medium okra cut into large bites
  • 3/4 cup chicken stock
  • 8 basil leaves cut into ribbons
  • 2 tbsp olive oil

Mix chicken thighs with sea salt, chili powder, turmeric, cardamon, and ginger. Let marinate for two hours stirring every hour. In a large saute pan heat olive oil over medium heat. Add cumin seeds and cook until they pop. Add onion and saute until golden. Add jalapeno and chicken and cook until meat is browned. Add okra, tomatoes, chicken stock and basil and bring to a simmer. Cover and cook until meat is done and okra soft. Remove lid and cook down until sauce is thick. Serve hot.
