Now that cannellini beans are sold in the bulk section of the supermarket, there is no need to buy another white bean. This is a great side for barbecue or a pot luck.
Cold Cannellini Bean Salad
- 1/2 lb dried cannellini beans
- 4 leaves basil chopped
- 3 slices bacon diced fine
- 1 cup onion diced fine
- 1 tbsp fresh parsley chopped
- 1 Anaheim pepper chopped fine
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- Salt/pepper
Soak beans in salted water overnight. Cook beans until tender then strain into a large bowl. Fry bacon in a skillet until browned. Add onion and saute over low heat until golden, deglazing pan with juices. Add everything to beans and season with salt and pepper. Place in the refrigerator and chill for two hours. Check seasoning before serving adding more oil, lemon juice or spice if necessary.

Very good salad indeed – love those flavours. The Vendee ( where we live in France) is famous both for its beans and ham:. bacon is not really a French thing.
They look great Greg. I’ve just been to the market here in Stuttgart hoping for fresh beans, coco or borlotti. No such luck. The lady at the stand said that the Germans were not interested in the beans. Savages π
I can *almost* agree about the No Other Bean thing…but you need Navy Beans to make good Boston Baked Beans….mmmmmmm….

I’ve always cheated and used canned beans. I’ll have to try this overnight soaking method soon.
Growing up the only white beans we had were Great Northern…I was never much of a fan. Cannellini Beans are just enough different…more firm, larger, more flavorful…that I love them. They are great in salads or as you have presented them. Great simple recipe.
Bean salad is definitely a favourite; perfect for a BBQ or picnic.

Isn’t it something the way cannellini beans have suddenly been “discovered”? You’re right, Greg. I remember seeing them dried at a small Italian grocery for the first time bout 20 years ago. Now they’re everywhere and we have this great recipe to of yours to take advantage of the new supply. π
