With all the tomatoes from the garden I have had time to contemplate some deep philosophical issues, such as how to improve the classic BLT.
The answer: Add a fried egg in between. This may require a fork and knife to eat.
Hobo Style BLT
- 2 slices sandwich bread (whole wheat or rye for the best results) toasted
- 1 hobo egg
- 4 slices bacon
- 1 tomato sliced thick
- 1 large leaf lettuce
- Mayo
Start with a layer of mayo on a slice of toasted bread. Then 2 slices bacon. Then half the tomato. Then the hobo egg. Then another layer of bacon. Then the rest of the tomato. Then the lettuce. Then top with final piece of bread.
Oh what I would give for a bite of this right this minute! Looks perfect.

Aww, see I’m of the opinion a BLT can’t be beater anyway – I love them!
With that for breakfast…… there would be no need for lunch! I sometimes cook the tomato, it adds an extra sweetness.
We that a lot with fried eggs. We’ll have to try it with a sandwich next time.

Hobo egg? Ha! I love it (had to follow your link to find out why it’s called a ‘hobo egg’. I’m still clueless!). You definitely upped the ante with this BLT. Looks amazing. I think you should call it a ‘BELT’ (bacon, egg… ah, you get it). I envy your glut of garden fresh tomatoes. We don’t have a ‘garden’ but I’m trying to grow my own herbs on our balcony. Nothing like fresh produce you’ve grown yourself!
I’m in the process of making BLTs for dinner. It’s Summer and there are few better ways to enjoy fresh-picked tomatoes. I’ll be adding an egg tonight. Thanks, Greg!
