A heavy dose of powdered sugar never hurt

This was a great way to use up some leftover egg whites and showcase fresh fruit. Don’t have buttermilk or egg whites? Go check out one of our other French toast recipes.

French Toast with Fresh Fruit

  • 1 large peach, pitted and sliced
  • 1 pint blueberries
  • 2 tsp fresh mint, cut in ribbons
  • 1/4 cup honey
  • scant 1/4 cup lemon juice
  • 3 egg whites
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 tsp vanilla
  • roughly 1/2 pound sourdough bread, cut into 1/4-inch slices

In a shallow bowl mix lemon juice, honey and mint. Add peaches and berries and toss to coat. Set aside. Set griddle over medium heat and brush with butter or spray with cooking spray. Mix egg whites, egg, buttermilk and vanilla. Dip bread in egg mix and cook on griddle or in frying pan until egg on both sides is cooked, about two-three minutes on each side depending on how hot the griddle is. Once all the toast is cooked divide toast between two to four plates and top with berries. A little extra honey or some maple syrup is good too.
