Fresh flavors are key

This is a great side or main course. It can be served over a bed of greens, rice or pasta. Or serve it by itself with bread to dip in or in a group of dips for a tapas night. It is good hot or cold as well. French lentils are smaller and firmer than normal lentils and retain their shape really well for this, but normal lentils can be used it will just be a little more creamy.

Lentil Salad

  • 1 cup french lentils
  • 1 cup minced red onion
  • 2 tbsp chopped fresh mint
  • 1 rib celery chopped fine
  • 1 anaheim pepper chopped fine
  • 2 tbsp fresh thyme chopped
  • 3-4 roma tomatoes chopped small
  • 1 tbsp fresh parsley chopped
  • 1/2 cup dry white wine
  • 2 cups chicken stock
  • 4 tbsp feta
  • Salt/pepper

Heat 2 tbsp butter in a 3 quart sauce pan and add onion. Saute over low until golden brown then add lentils and stir to coat. Turn heat to medium high and add wine. Cook until absorbed then add stock and thyme and bring to a boil. Turn heat to a simmer and cook until liquid is absorbed and lentils are cooked but still firm to the bite, about 30 minutes. Remove from heat, add the remaining ingredients and season with salt and pepper. Serve hot or cold.

  2. Very good indeed. I’d forgotten about lentils during the summer months. Our green lentilles de Puy, which I think are amongst the best, do need a good wash before you start.

  5. I have never had this salad but am always reading about using lentils in salads so this intrigues me. I have lentils and lots of mint…Sounds very summery and refreshing.
