It is summer now

If you think of Happy Hour all day Friday this is the drink for you. Make your berry mix in the morning so it can macerate all day in the refrigerator and you can think happy thoughts. Or you could just make it half an hour before you mix the drinks as well.

Blackberry Thyme Martinis

  • 1 part blackberry thyme juice*
  • 1/2 part simple syrup
  • 1 part vodka

Mix ingredients in a cocktail shaker with ice. Strain into a martini glass. Garnish with fresh thyme.

Blackberry Thyme Juice

  • 1 pint fresh blackberries
  • 1/4 cup honey
  • juice from one lime
  • 3 tbsp fresh chopped thyme

Mix all ingredients in a large bowl and refrigerate for 30 minutes or up to eight hours. Blend all ingredients until pureed. Strain through a sieve reserving juice and discarding pulp.

    I love martinis and have a huge surplus of herbs in the herb garden… No blackberries as yet – any other fruit suggestions to go with thyme?
    Would thyme work in a gin based martini?!
