This is a week ahead of time so everyone can plan ahead. Of course nothing says you can’t make a few of these earlier in the week. Instead of a full menu, we’re going al a carte this week. Mix and match as you wish.

    We watched an interesting show about Fast Food in South and Central America tonight ~ Brazil, Peru, Columbia, Mexico, etc. Lots of interesting overlaps and variations of fast food here and there.

    Why am I sharing this? Because empanadas and arepas figured prominently . . . as did beans, rice, and guacamole.

    I adore Mexican food and this celebration is a perfect reason to make it! And all of a sudden I can’t stop thinking about the tortilla soup.

  4. In Mexico, tacos are made with two tortillas, one overlapping the other to make a “long” soft taco. All this goodness would make quite a meal in a long taco. πŸ™‚

  5. Some year you and I should meet and celebrate together. Our passion for Mexican food seems to be equal. I think we might explode after the meal though…

    Oh my gosh. This post is making me drool!!!! Those smoked pork tacos look incredible, as does that pink and moist salmon on black bean sauce. Argh. It’s after 9pm here and I’ve already had dinner. Now I just want to make tacos.
