Sometimes a meal just requires prosciutto. This works well as an appetizer or side dish
Prosciutto Wrapped Asparagus
- 1 bunch asparagus
- 1/4 lb thinly sliced prosciutto
- 1/2 lemon
- Grated Romano
- Olive oil
- Salt/pepper
Spread asparagus out in one layer on a baking pan. Coat in oil, salt and pepper then juice lemon over. Roast at 350 degrees until done, about 15 minutes. Remove from oven, sprinkle on cheese and let cool. Wrap each asparagus in a layer of prosciutto. Depending on the size of the slices you should be able to roll up at least three stalks per piece of meat. Place on a plate and refrigerate for at least an hour before serving.
Asparagus, proscuitto and olive oil – pretty perfect. I think Romano must be an American term for an Italian cheese – I’m guessing Pecorino or Parmesan. The addition of that just makes it perfect.

I was just thinking today how asparagus season must be approaching. I could certainly imagine eating these accompanied by a chilled glass of Gavi de Gavi on a warm sunny May evening.
