Want to fancy up those roasted potatoes? Or use up some pesto from last year now that the garden is about to start producing again? Or maybe both?
Pesto Coated Oven Roasted Potatoes
- 2 tbsp pesto
- 2 lbs potatoes chopped into medium sized bites
- 1 cup onion diced medium
- 15-20 black olives halved
- 3 cloves garlic chopped roughly
- Olive oil
Mix pesto with enough olive oil to form a thick paste. Toss garlic, and potatoes in mixture and spoon into 1 layer in a baking dish. Season with salt and pepper and bake in an oven at 375 degrees for 30 minutes stirring once at 15 minutes. Add onion and olives and cook until browned stirring often, about 20 minutes more. Serve hot with roast meat, hamburgers, or just about anything.
