I’ll just have two stacks

Consider these a way to fight the symptoms of Christmas cookie withdrawal.

Oatmeal Cookies with White Chocolate and Cherries

  • 3/4 cup butter or shortening
  • 1 cup packed brown sugar
  • 1/4 cup honey
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 2 cups rolled oats
  • 1 cup white chocolate chips
  • 1/2 cup dried cherries

Beat butter or shortening on medium for 30 seconds. Add brown sugar, honey, baking soda, baking powder and cinnamon and beat until combined. Beat in egg and vanilla until combined. Add flour and beat until it’s incorporated. Stir in the oats, cherries and chocolate chips. Drop dough into balls on a greased cookie sheet. Bake at 375 until golden, about 10-12 minutes. Let cool on a rack.

    Stuffed peppers, stuffed peppers. I have to think healthy. πŸ˜‰ These would give me that quick fix, but there are NYE resolutions to keep, even if only for a week or two. Happy New Year!

  6. check, check, check–I have everything, but will need to run out and get the white chocolate chips and dried cherries. I don’t think grandson will mind baking a bit this afternoon.

  8. YUM! I just made something like this and put it on my blog yesterday. I thought to myself that they would be great with cranberries- but cherries sound even better!
