Consider these a way to fight the symptoms of Christmas cookie withdrawal.
Oatmeal Cookies with White Chocolate and Cherries
- 3/4 cup butter or shortening
- 1 cup packed brown sugar
- 1/4 cup honey
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp ground cinnamon
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 2 cups rolled oats
- 1 cup white chocolate chips
- 1/2 cup dried cherries
Beat butter or shortening on medium for 30 seconds. Add brown sugar, honey, baking soda, baking powder and cinnamon and beat until combined. Beat in egg and vanilla until combined. Add flour and beat until it’s incorporated. Stir in the oats, cherries and chocolate chips. Drop dough into balls on a greased cookie sheet. Bake at 375 until golden, about 10-12 minutes. Let cool on a rack.
I’ll need some milk and cookies after the champagne!

YUM! I just made something like this and put it on my blog yesterday. I thought to myself that they would be great with cranberries- but cherries sound even better!
I made a similar cookie but without the oatmeal. At the time, I thought it was really good. Now I see it could have been much better. And I was so close …

Have I tol you I LOVE LOVE LOVE white chocolate? These cookies would make me very very happy on the 2nd of the year, but unfortunately I gotta go bakc to work and baking will take second spot in my life… (sniff…. sniff…. sniff….)
