This is a great way to repurpose that cranberry sauce. If you don’t have phyllo dough, wonton wrappers will also do the trick. (Sunday Suppers will return next week.)
Cranberry Brie Bites
- 5 pieces phyllo dough
- 12 pecans
- 2-3 ounces brie
- 6 tsp cranberry sauce
- about 2 tsp olive oil or melted butter
Brush olive oil or melted butter between each layer of dough. Stack the pieces evenly. Cut the layers into 12 squares using a pizza cutter. Push the squares into a mini muffin tin with the edges sticking up. Bake at 350 until golden, about 15 minutes. Cut a piece of brie and place in the bottom of each cup. Return pan to the oven and let brie soften, about 4-5 minutes. Allow to cool slightly. Top each cup with a half teaspoon of cranberry sauce and a pecan.
Delicious combination of textures (crispy and creamy) and tastes (sweet and salty) in this dish. I love both brie and cranberry.

We drank a pinot, but a sparkling or sweet white would be good. We were having a heavier dinner so picked something that wen with both.

We’ve used wonton wrappers before. I think we put little shrimp mango bites in those. Can’t remember where that recipe was from.

Great looking appetizer…I’d make it even if I wasn’t repurposing cranberry sauce! I say puh-can…I was born in Alabama. My husband says pee-can…he was born in Ft. Lauderdale. He’s wrong.
I feel like this is the kind of thing people would go nuts over on pinterest because it’s so clever. puh-can is the only way to say pecan.
