Cranberry Brie Bites

You say pee-can, I say puh-can

This is a great way to repurpose that cranberry sauce. If you don’t have phyllo dough, wonton wrappers will also do the trick. (Sunday Suppers will return next week.)

Cranberry Brie Bites

  • 5 pieces phyllo dough
  • 12 pecans
  • 2-3 ounces brie
  • 6 tsp cranberry sauce
  • about 2 tsp olive oil or melted butter

Brush olive oil or melted butter between each layer of dough. Stack the pieces evenly. Cut the layers into 12 squares using a pizza cutter. Push the squares into a mini muffin tin with the edges sticking up. Bake at 350 until golden, about 15 minutes. Cut a piece of brie and place in the bottom of each cup. Return pan to the oven and let brie soften, about 4-5 minutes. Allow to cool slightly. Top each cup with a half teaspoon of cranberry sauce and a pecan.
