We don’t own a crockpot, big shocker there. But there are plenty of times we don’t want to mess with multiple courses or a zillion pots.
Here are some of our favorite one-dish menus.
Shrimp Risotto

I know, there should be more shrimp on the plate
Kale, Spinach and Bread Casserole

Cheese makes everything better
Stuffed Squash with An Indian Twist

A rare sighting of the elusive spotted squash
Red Curry with Shrimp and Green Beans

Break out the company chopsticks

About Rufus' Food and Spirits Guide
This blog attempts to collect some of the things I try to create with food and booze. Sometimes I succeed and sometimes I fail. My hope is to entertain and maybe help people think a little harder about what they decide to eat and drink.
No crockpot? That is a bit of a surprise! I won our crockpot on a photo contest. The risotto looks amazing.
Why no crockpot? I have to say it is not my go-to source of a meal, but I do like it for a few things. Like soup or stew. Mostly because it is safer to leave on all day when you go to work than a burner.
“Stuffed Squash with An Indian Twist” ~ This is wonderful, I’m always up for new squash recipes.
I love using my slow cooker for simmering dishes like 3-bean veggie chili, curried lentil soup, etc. . . . leaving me free to do other things (like enjoy an extended happy hour). 😀
I’m surprised you two don’t own a crockpot. It would leave more time for drinking and gardening for you!
These all look wonderful. (Ah … see what I did there?)
The shrimp looks wonderful. If it makes you feel better we don’t have a crockpot either.
Mmmm! Love me some shrimp with most anything!
I love my crockpot.. but forget about it until late afternoon, lol. So these will be handy in the weeks to come! I love when everyone’s done in one pot!
Helloooo bread casserole. I need to try that one out.
I still remember that shrimp risotto, one of my favorites in your site
Hubby objected to having a crock pot for years. I finally bought one early in the summer to make tomato sauce, so I didn’t have to watch it on the stovetop…
He was so taken with it, he ordered a fancy new one, with a timer 😉
Yummy?…
Shrimp risotto please!
