This meal is simple to prepare and doesn’t take too long to cook. It was inspired by Madhur Jaffrey’s Kerala-style Chicken Curry in Curry Easy. Serve it with jasmine rice or naan.
Chicken and Coconut Curry
- 2 chicken breasts, skinned and deboned
- 3 tbsp olive oil
- 3/4 tsp whole cumin seeds
- 1/2 tsp coriander seeds
- 1/2 medium onion, diced
- 2 tsp fresh ginger, finely grated
- 2 garlic cloves, minced
- 3 chiles, sliced thin
- 1 tbsp paprika
- 1 tsp salt
- black pepper to taste
- 2 cups chicken broth
- 1 14.5 ounce can coconut milk
- 10 basil leaves, torn
Cut chicken in 1/2- to 1-inch chunks. Set aside. In a large skillet or saute pan, heat oil over medium heat. Add cumin and coriander seeds and heat for 30 seconds. Add onions and allow to just brown, stirring often. Add ginger, garlic and peppers. Stir for another minute. Add chicken and let brown on each side. Add broth, salt, half the basil leaves, and paprika and bring to a simmer. Lower the heat and cook for 25 minutes covered. Remove the lid and allow about half the liquid to cook off. Add the coconut milk and cook until thick, another 10 minutes. Add the remaining basil leaves and black pepper to taste. Serve warm.
I had chicken curry last night for dinner too. It IS quick and delicious and most of the stuff sits in the pantry. Yours looks really good!
Sounds like a great meal.
I have rarely met a chicken curry I don’t like. Might I suggest peanut oil rather than olive oil for a more traditional Indian flavor?
Sure, we have about 15 kinds of olive oil and sesame oil. We also need to get some grapeseed oil!
Looks so creamy and yum! Good comfort food 🙂
Sounds a very good curry. I can’t remember tasting a good curry since I left England. My own attempts are pale shadows of the flavours that I’m looking for.
I love chicken coconut curries! This looks divine, I want to make it right away!!
I love Madhur Jaffrey’s cookbooks; I saw her on Martha Stewart Luving several years ago and she taught us how to brown the onions got Indisn cooking (fascinating that such a simple step makes such a difference). Coconut curry us a favourite.
Love coconut curries an this is pact full of fabulous flavours.
🙂 Mandy
Wow, can it really be that simple? What am I waiting for? Terrific recipe; thanks muchly!
This is one of those dishes I’ve ordered at restaurants but never considered making at home. Well, I will now. Thanks!
We know your go-to food, tends to be our go-to too! It’s funny, you do need to get some spices to make Indian. But it comes together quickly.
One of my all time favorite dishes – and I’ve never tried to make it. This makes it look so easy!~
Oh, what a great curry. That reminds me that I haven’t had Indian in awhile….
I adore curry and will definitely be trying this soon. Yum!
I love curries, especially with coconut.
Lovely 30 minute meal!
Yum!
You know I loves me some chicken recipes. I’d sop up all that sauce-y goodness with some fresh naan. Mmm.
We actually had a taste for this the other day…didn’t do anything about it. But we did talk about making it. LOL. I’ll live vicariously through you this evening. 🙂
Cool. We loved that Mister N replied to my comment!
My kind of dish! I love this extra hot so we usually add lots of chillies on it
My fiance is obsessed with curry – I’ll definitely have to try this.
I’m not a huge curry person but this dish may actually make me a believer.
This looks so good, can’t wait to try it!
I’ve never been much of a curry fan, but lately, it’s definitely been growing on me. This sounds fantastic!
I love the creamy gravy. Coconut gravy sounds great for chicken curry.
Love, love, love curries!

I think I pinned it. I’ll have to look!
Just so you know – I think you’re pretty darn amazing, between the cooking and re-doing your kitchen…. it sure seems to me that ‘you’re a keeper’!!!
