This salad is a great way to use slightly unripe tomatoes if someone happened to get overzealous and pick a few in the garden. I am not naming any names but her initials are Katherine.
Tomato Cucumber Salad
- 1 cucumber, sliced thin
- 2 medium tomatoes, sliced thin
- 1/4 small red onion, sliced paper thin
- 1 tbsp fresh oregano, chopped
- Dry sherry
- Olive oil
- Salt/pepper
In a pie dish layer onion, then cucumber, then onion, then tomato. After each layer drizzle with oil and a cap full sherry, sprinkle with salt, pepper and oregano. Let sit in refrigerator at least two hours before serving.
Simple, unbeatable flavour, summery, … healthy.. what’s not to love about this salad?

We often enjoy a cucumber, tomato and onion salad. I love the idea of the sherry – I usually make a dressing using vinegar, oil, sugar, salt, pepper and dried sweet basil.

Delish! I’m always accused of picking under-ripe toms from the mad cherry tomato tree, but I reckon they can ripen up inside! 🙂
You know I’ll take a plate without onions! Or, I could just pick them off myself. =D
You can’t beat a simple salad, I will have to wait a few months for toms to be back in season though, we are warming ourselves with hearty stews at the moment.
This sounds great, especially if served well-chilled on a hot summer day. Anything to keep that stove off.

A neighbor just gifted us with several cucumbers, so I think this is the perfect way to serve them!

The only way I’d turn down this salad is when I’m dead…no what I’d still want it then too.
Ripe or not this salad is so pretty and healthy looking. I am sure “K” will not do this too often!
I make a similar salad using rice vinegar, but sherry would give this a whole new lease of life!
