Eat your greens…

This is not a mojito

And drink them too….

Cucumber Tonic

  • 1 1/2 ounces gin
  • 6 mint leaves
  • 2 ounces cucumber liqueur
  • soda water
  • squeeze lime juice

Muddle mint with gin in a Collins glass. Throw in five ice cubes. (Four or six would also work, but not seven.) Pour in liqueur, top with soda water and a squeeze of lime.

  1. I adore cucumbers or the essence in drinks. Even water at a spa that’s been infused with cucumber is alright by me.

    This drink sounds so refreshing. Perfect summer time drink for sure. It made me think though… I wonder what we can do with all those cucumbers growing in the garden. How is your growing?

    YUM! I love cucumber cocktails. I have never tried Thatcher’s. Their website is cool, and looks like they have a lot of tasty choices – sadly, they don’t sell in my state. Bummer.

    Cucumber….. liqueuer? Gosh, well know I’ve seen everything, to be sure! I can’t imagine what it’s like… is it a very strong cucumber flavour? Sounds like a delightfully light and refreshing drink for a hot summer’s day!

  11. I’ve never heard of cucumber liqueur, but the name Thatcher on the bottle, the same name as the dreaded Iron Lady of English politics, might stop me testing this one:)

    I love love (love) gin & tonics, and I love the freshness that cucumbers can give the drink, so I’m totally interested in cucumber liqueur. Notice you’re using club soda and not tonic water … is that your personal preference? I’ve always been a big fan of the “bite” of tonic water. Man, I wish it was a hot summer day so I could sit on my non-existent porch and sip this drink!
