Mashed Sweet Potatoes with Pineapple

So sweet

We love mashed sweet potatoes. Typically, we just use a bit of butter, spice and molasses or sorghum. But we had a bit of pineapple leftover after making sauce for the cod and took a different approach this time. The results were delicious and quite bright.

Mashed Sweet Potatoes with Pineapple

  • 2 large sweet potatoes
  • 3/4 cup pureed pineapple
  • 1 tablespoon butter
  • 2 tbsp brown sugar
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp cinnamon
  • salt to taste

Prick sweet potatoes with fork and bake at 375 until tender, about an hour. Let cool slightly. Skin and place flesh in a large bowl. Mash with butter. Stir in pineapple and spices. Place in a baking dish and cook until hot, about 10 minutes.

    I too love sweet potato, bit I’ve never added extra sweetness, I’ll have to remember this one when pork tenderloins are next on the menu!

    I’m on a real pineapple kick at the moment – I think it’s because of the one I had the other day… so wonderfully sweet – probably the best I ever had πŸ™‚ This sounds like a nice light, but filling dessert or snack – hm, actually I’d want to spoon it over my breakfast cereal too πŸ™‚

    I never would have thought to add pineapples to mashed sweet potatoes. I’m not sure that I would like it or not. Might be worth a try though and maybe it will get Miss A to eat sweet potatoes with me.
