Brussels … kraut?

This would also go good with fried eggs and polenta

This is a great way to serve brussels sprouts to people who think they do not like them. The bacon, red onion and cider vinegar help cut some of the sprouts bitterness.

Shredded Brussels Sprouts

  • 14-18 medium sized brussels sprouts
  • 1/2 red onion sliced fine
  • 3 slices bacon
  • 1/4 cup cider vinegar
  • Salt/pepper

Wash sprouts, remove outer leaves and cut off bottom stems. Slice into thin ribbons. In a large saute pan fry bacon until crisp. Drain fat reserving three tablespoons. Crumble bacon and set aside. Cook onion in fat over medium low heat until it begins to brown. Add shredded sprouts and cook until they begin to wilt. Turn heat to high, add vinegar and reduce scraping up any bits stuck to pan. Spoon mixture into a bowl, add bacon and season with salt and pepper. Serve room temperature.

    Perfect way to serve Brussel sprouts. It reminds me of a dish in Frankfurt, obviously with cabbage though, where they added quark and gnocchi to this mix of ingredients….lovely

  13. I love brussel sprouts. Perhaps my husband would like these with bacon. He loves bacon and you’re right, they don’t look like brussel sprouts this way.

    Too funny…my brother made Brussels sprouts cooked in bacon grease…topped with bacon crumbles (so healthy, I know) over the weekend. You’re right–definitely a great way to serve them for those of us who didn’t think they liked them!

  29. I love this way to serve Brussels. The bacon gives it some smokiness and the cider vinegar some tang. I also crumble blue cheese over the top. Wish I had some now.
