We had an oversized, stale sourdough loaf on our counter one recent Saturday that was destined for a batch of croutons. But inspiration hadn’t really struck. A little oil, a little sea salt was perhaps the only treatment they’d get. Then we saw this post over at Cooking in Sens and thought: ‘Hey wait we could make pesto croutons.’ Ours were topping a salad, hers a beetroot tiramisu.
Most of you are probably already familiar with Rosemary’s blog, but if you haven’t seen it go check it out. She’s an American living in France, so she’s just as good as making barbecue as crispy frog legs. She’s also a wonderful photographer and chef and has the best stocked freezer on that side of the Atlantic.
Pesto Croutons
- 6 cups stale bread, cut into 1/2-inch cubes
- 2/3 cup olive oil
- 1/4 cup grated Romano
- salt/pepper to taste (remember the cheese is salty)
- 2-3 tbsp pesto
Mix pesto, cheese, oil, salt and pepper in a small bowl. The mix should be a bit soupy so that it coats the bread. Add more oil if needed. In a large bowl toss the bread cubes and the pesto mix. Place on a greased cookie sheet in a single layer. Bake at 375 until toasted, stirring if needed, about 15 minutes.
Don’t those croutons look zesty and good? Salad is definitely an accompaniment for them.

I checked out that Beetroot Tiramisu as well and found it pretty unusual but interesting.

I LOVE sourdough bread (and you know I’m not a bread eater), so I can imagine how delicious these croutons were.
Great idea for something to do with the pesto I’ll be making this summer. Right now I have about 30 basil seedlings getting ready for trans-planting. Freeze warning tonight so it’s going to be a while though. π¦
I just introduced my mother to the wonders of pesto. These croutons sound like a great next step.
What a great idea! I agree with Ruth. These would be a tasty addition to any salad but I would enjoy them as a snack every bit as much.

Oh my, I’ve got a real weakness when it comes to croutons. Sure salad is all well and good, but when you add some crispy cubed bread all of a sudden the main attraction changes somewhat :D. I love the idea of making pesto croutons – makes a change from plain garlic… nice one π

Yup this is excellent use of stale bread. I had a similar idea a few weeks back that also turned out great…though it must remain a secret until I post it. π
I make my own bread crumbs but have not made croutons in years. I will have to make these.
We’re the same way. Always make bread crumbs, but rarely croutons.
