White Bean Dip with Roasted Garlic

So creamy without any milk products should be against the law

This is a very easy dip to make and the end result is extremely creamy with superior flavor. Use anything from veggies to tortilla chips as the dipping vessels.

Any type and mixture of white bean will work but cannellini beans are worth the extra cost for the flavor.

White Bean Dip

  • 1 lb cannellini beans
  • 4-6 cloves garlic, peeled
  • 5 green onions chopped fine
  • Extra Virgin Olive Oil
  • Salt/pepper

Wash beans and pick out any stones or bad ones. Soak beans overnight in cold water. Bring beans to a boil and cook over a low simmer until extremely soft, about two hours. Roast garlic, wrapped  in foil with a bit of olive oil at 350 until softened and beginning to brown. Blend beans and garlic with more oil until smooth. Add green onions and season with oil, salt and pepper. Chill in refrigerator for two hours then recheck seasoning. Serve with whatever floats your boat for dipping items.

    I’ll have to try this. I’m assuming your word “blend” means quite well, given the creamier appearance in the picture. The roasted garlic I am sure is the centerpiece of this dip.
