These hearty pancakes will get your morning off to a great start. (Yep, that was cheesy, but you’ll like these we swear.)
Sorghum and Pecan Pancakes
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 cup milk
- 2 tbsp sorghum
- 1/2 tsp vanilla
- 1/2 cup coarsely chopped pecans
Set griddle over medium heat and grease with butter or spray with cooking spray. Combine dry ingredients and make a well in the center. Add egg, milk, vanilla and sorghum. Stir until just incorporated. Ladle about a quarter cup of batter in batches onto a hot griddle. Cook until top bubbles, about three minutes. Flip and cook about a minute longer. Serve warm with extra sorghum.
What’s that? No sorghum in your pantry? Well fix that. I haven’t seen sorghum in years. My grandfather used to top biscuits with the stuff. I’m going to have to hunt for a jar next time I’m at the market.

That looks great – I guess Sorghum is like Maple syrup, although up to now I thought that the word sorghum referred to the stuff that is used to caulk the decks of sailing ships! I learn something more about America each day through these blogs:-)

Bees? I don’t think so. Yes, it’s sweet. Not as bitter as molasses, but it has a kick.
I like the mixture of wheat and all purpose flour. Pecan can do the trick.
Dear God… you just can’t beat a great stack of pancakes can you?! I have no idea what sorghum is, but I’m going to pretend it’s like golden syrup, in which case I say “may syrup rain down upon my stacks!”

Some day I’ll have to find myself a jar of sorghum so I can do a taste test. Then I can make these pancakes too, bonus!
Sorghum has never been in mypantry but I’m so very curious now. It’s for feeding livestock? interesting…but what I really like is that its gluten free! Not that I require that, but I’ve been trying to eat just a bit more gluten free. I think making pancakes like this will be my easy intro into sorghum. Thanks for the introduction!!

Oh my goodness! I am sitting here starving and this comes up. I am going to make these and I always have sorghum on hand. Old timers took a spoonful of sorghum a day for health purposes. It has a lot of iron in it. I used to love watching it being made. Guess I had better get started. Making these right now!
