Sorghum and Pecan Pancakes

Wait were we supposed to stash the Christmas mugs?

These hearty pancakes will get your morning off to a great start. (Yep, that was cheesy, but you’ll like these we swear.)

Sorghum and Pecan Pancakes

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 cup milk
  • 2 tbsp sorghum
  • 1/2 tsp vanilla
  • 1/2 cup coarsely chopped pecans

Set griddle over medium heat and grease with butter or spray with cooking spray. Combine dry ingredients and make a well in the center. Add egg, milk, vanilla and sorghum. Stir until just incorporated. Ladle about a quarter cup of batter in batches onto a hot griddle. Cook until top bubbles, about three minutes. Flip and cook about a minute longer. Serve warm with extra sorghum.

What’s that? No sorghum in your pantry? Well fix that. But in the meantime, here are some great pancake recipes that don’t use the Southern miracle ingredient: blueberry pancakes from FoodIsTherapy; apple cinnamon pancakes and peaches and cream pancakes from yours truly and, oh darn this one calls for sorghum too, but it’s too good not to list: sorghum and sweet potato pancakes from Gourmandistan.

  11. That looks great – I guess Sorghum is like Maple syrup, although up to now I thought that the word sorghum referred to the stuff that is used to caulk the decks of sailing ships! I learn something more about America each day through these blogs:-)

I’ve actually never tried sorghum. I figure it must be like molasses, and I like that. A lot. Too much.

Another person who has heard of sorghum but has no clue what it is. I see yours came from an apiary so do bees have something to do with its production? I gather it’s sweet. 🙂

  30. I like the mixture of wheat and all purpose flour. Pecan can do the trick.

  31. Charles says:

Dear God… you just can’t beat a great stack of pancakes can you?! I have no idea what sorghum is, but I’m going to pretend it’s like golden syrup, in which case I say “may syrup rain down upon my stacks!”

I never had tried sourghum, I wonder if they were sold here

  38. Some day I’ll have to find myself a jar of sorghum so I can do a taste test. Then I can make these pancakes too, bonus!

  39. spicegirlfla says:

Sorghum has never been in mypantry but I’m so very curious now. It’s for feeding livestock? interesting…but what I really like is that its gluten free! Not that I require that, but I’ve been trying to eat just a bit more gluten free. I think making pancakes like this will be my easy intro into sorghum. Thanks for the introduction!!

  40. Kristy says:

I do need to find some sorghum. I remember your peaches and cream pancakes too. One of these days I’ll remember to keep my eyes open for it. 🙂

  41. Don’t you just love making your own pancake mix – now Greg just get a waffle iron and you ‘lll be in business! These are drool worthy!

  42. Oh my goodness! I am sitting here starving and this comes up. I am going to make these and I always have sorghum on hand. Old timers took a spoonful of sorghum a day for health purposes. It has a lot of iron in it. I used to love watching it being made. Guess I had better get started. Making these right now!
