Because everyone needs a little something sweet every now and then.
Blueberry cobbler
- 2 pints blueberries, fresh or frozen
- 1 tsp cinnamon
- 2 tbsp brown sugar
- 1/3 cup port
- 1 tsp cornstarch, mixed with equal amount water until smooth
- 1 cup flour
- 1/3 cup butter
- 1/2 cup milk
- 1 tsp baking powder
- 1 tbsp sugar
In a saucepan over medium heat, bring port, brown sugar and one pint of berries to a boil, mash berries with a metal potato masher. Add corn starch mix and allow to thicken, stirring well. Add remaining berries and stir, bringing back to a boil and allowing mix to thicken again, about five minutes or longer if using frozen. Remove from heat and set aside. In a large bowl, mix flour and baking powder. Cut butter into flour mix, until crumbly. Add sugar and milk. Stir to incorporate. The mix will be wet, more of a drop biscuit or almost a cake batter consistency. Preheat oven to 350. Divide berries evenly between three to four buttered 12-ounce dishes or a single two-quart casserole dish. Use a spoon to spread batter evenly over top. (It doesn’t have to be perfect.) Sprinkle with cinnamon sugar if desired. Place baking dish on a cookie sheet lined with foil to catch any leaks. Bake for 40-45 minutes or until tops are golden. They will rise in the oven and fall somewhat and crack once they’re cooled.

Those look delicious. And I agree with not wanting to do any of the dishwashing. 🙂 Maybe you could use those small disposable aluminum foil pans which would serve 2 people.
PS: I’d have to use orange juice instead of the port (don’t have any handy) but I think it would still be spectacular. 🙂

Very.. very sneaky… I was admiring the dripping sticky bits of Cobbler, imagining a spoonful and my eyes almost slid right through the ingredients… then back up.. what?? Port?? Incredible.. you’ve managed to take home-cooking and make it gourmet again:) I have to try this now.. I wish I had those cute little dishes for it:)

Now that’s a great recipe! I just love the look of the blueberry juice oozing out of the dish. Blueberries are my most favourite berry to cook with. Looks great and I can’t wait to try it!

That photo should become the iconic blueberry cobbler shot! I love cobbler, Greg, but my recipe results in a more cake-like topping, It’s good but, by the looks of ’em, yours is far better. Next time I can get my hands on some good, fresh peaches — maybe the fabled Mackinaw — I’ll ditch my topping and give yours a try. It looks like the kind of topping I’ve been striving for. … Thanks!
I love blueberry cobbler. I remember making it using native Maine blueberries when I was a kid. No little blue marvels here but we have the big berries and they’re cheap right now. I’m going to give this a try this weekend. Yummy looking.

What a great dessert for an overcast wintery day, Greg! Although I cannot complain either, winter has been unseasonably warm and dry. I love that this cobbler has port in it.
