Smoked Pork in Verde Sauce

Everybody loves tacos

Everyone should have a side of smoked meat in their refrigerators at all times. For those of you new to smoking go here. For this recipe do not glaze the meat with barbecue sauce during the last 30 minutes of smoking. Shred the pork while it is hot for an easier and more even result.

Pulled pork with Tomatillo sauce

  • 1 lb smoked pulled pork
  • 2 cans tomatillos
  • 1 red onion diced fine
  • 4 cloves garlic
  • 3 jalapenos diced fine
  • 2 tbsp fresh cilantro
  • 1 cup chicken stock
  • 1 lime
  • Salt/pepper

Fry onion in a large saute pan till softened. Add jalapeno and garlic and cook until fragrant, about two minutes. Discard juice from canned tomatillos and add to pan. Stir well crushing the tomatillos with the back of a spoon as they soften. Stir in pork. Add chicken stock, cilantro and lime juice. Season with salt and pepper and cook until thickened. Serve on corn tortillas with sour cream.
