Asparagus and beef rice bowl

A little rooster sauce goes a long way

We’ve been in a weeknight dinner rut. Both of us have been getting home later and that often translates to dinner after 8 p.m., when there are no leftovers to reheat. Ideally, we like weeknight meals that come together in 45 minutes to an hour, which can seem like an eternity when you’re hungry. Not that I’m grouchy or anything when hungry.

This one included a lot of steps, but quick ones, make rice, cook asparagus, fry eggs, throw it together.  OK, I admit I was glad Greg got home to help check things when he did. I’d wanted to have something like it since tasting a Korean bibimbap in London. Purists, relax, I know it’s not the same thing. We don’t profess to be experts at Asian cuisine and our quick meals usually include pasta, or chicken, or tortillas. But still we both thought this was pretty darn good. Like many of our meals it’s designed to serve two, but Greg can eat a bit.

Asparagus and beef rice bowl (adapted from April 2010 Bon Appetit)

  • 1 tablespoon sesame seeds
  • 1/2 tsp sea salt
  • 1 dried chili pepper
  • 3/4 pound cubed beef
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil, divided
  • 2 green onions, finely chopped or 2 tbsp diced red onion
  • 1 tbsp hoison sauce
  • 1 tablespoon sherry (or sake if you have it)
  • 2 garlic cloves, minced
  • 10-15 asparagus spears, trimmed
  • 2 teaspoons extra virgin olive oil
  • 2 eggs
  • 2 cups freshly cooked white rice (I used half low-sodium beef broth and half water)
  • 2 tbsp coarsely chopped cilantro
  • srirachi to taste

Toast sesame seeds in small skillet over medium heat until golden brown, stirring often, about 3 minutes. Transfer sesame seeds to small bowl to cool. Grind sesame seeds, sea salt, and dried pepper in mortar with pestle until about half of sesame seeds are finely ground.

Whisk together soy sauce, one tablespoon sesame oil, hoison sauce, onions, garlic, sherry. Toss beef in soy mixture. Let marinate at room temperature 30 minutes, tossing occasionally.

Bake asparagus at 350 on a baking sheet until tender, about eight minutes. Sprinkle sesame salt over; drizzle with remaining tablespoon sesame oil, toss to coat. Tent with foil to keep warm.

Brush griddle or frying pan with extra virgin olive oil. Using just enough marinade to coat the beef, cook meat until done, about five minutes. Transfer to bowl; tent with foil to keep warm. Crack eggs onto hot griddle or pan. (I cleaned it first, but if you want more flavor, have at it.) Cook until whites are set but yolks are still runny about two to three minutes.

Divide warm rice between two bowls. Top with asparagus, then beef. Top with fried egg. Top with cilantro and sriracha.

    My husband and I are the same in that dinnertime is getting later and later because of work boooo I am hideously cranky when hungry so I actually have “first dinner” (or also can be called “second lunch”) ! Great combination of ingredients here.

    I usually cook pasta as a quick dinner as well but this looks like a very tasty meal (I don’t eat asparagus nearly enough) though my patience is inversely proportional to how long it’s been since my last meal. 🙂

    Love the typo- “cubed beer” or you could change a letter, add an “a” it could be cubed bear.
    I know you meant beef but I thought the beer was fun!

It’s after 11 pm, end of a massive day’s work and social obligations, trying to wind down and all of a sudden I’m seriously craving this wildly tasty looking stuff. Yes, you did say it would be easy to put together in virtually no time, but am I not supposed to be thinking get-to-sleep thoughts? Beautiful combination.

  10. Those chopsticks are lovely. I collect them, lacquered, metal, wood, and occasionally vinyl. I have one twisted wood set, but they aren’t as lovely as these.

      Reminds me of a don buri so I’d probably use sushi rice on the bottom. 🙂 Yay on the ‘rooster’ or cock sauce. My bottle of sriracha is getting pretty low after last night’s spicy red miso soup with home made Chinese bbq’d pork and bok choy. When in a hurry, miso soup takes the edge of my hunger pangs til the rest of the meal is ready.

    Gorgeous photo, and it looks like a wonderfully comforting dish to be put together so quickly – but then, I am biased, I think most things involving rice are comfort food! Can also related to not being any sort of expert in Asian food but still loving to cook and eat it. No one said only Italians can cook Italian after all, did they? Then why not Asian?

    I totally agree with you: when you’re hungry, 45 minutes feels like an eeeeeternity. But this dish is awesome. I love everything about it, it’s kinda fancy, but quick to make. The fried egg is a REALLY great touch.

    Please don’t tell me it’s asparagus season in your region! (I was almost crying when I saw “early December tomatoes”). Your dish looks excellent and I’m not surprised: a bowl of rice, soy sauce, a fried egg = the quickest and most delicious meal I know! If you add asparagus, I’m in heaven (I wouldn’t even need meat).
    (By the way, you have very original chopsticks! They are not completely smooth, so probably easier to eat with…)

  35. I’ve been in a weeknight meal rut too. I resort to my crock pot a lot when I know I will be home late (so my husband doesn’t starve waiting, ha!) But this looks amazing. I love asian food, authentic or not. Beautiful photo as well.

    Oh, and I never get cranky when I’m hungry either. 😉
