Most people are too busy gobbling up turkey and stuffing on Thanksgiving to put much of a dent in the cranberry sauce. Here’s a great way to use up your leftovers. We used our raspberry cranberry sauce, but any variety will work.
Cranberry bread
- 1 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 3/4 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup apple cider or apple juice
- zest from one orange
- 3/4 tsp cardamom
- 1/4 cup butter, melted
- 4-6 tbsp cranberry sauce
- 1 egg
- 1/2 cup chopped pecans
Heat oven to 350 and grease a loaf pan. Combine flour, sugar, baking powder, baking soda and salt. Stir in 1 heaping spoonful of cranberry sauce, juice, butter and egg. Mix in pecans, cardamom and orange zest. Spoon two thirds of the batter into the loaf pan and smooth. Spread cranberry sauce over the top in an even layer. You can leave a little border of dough, but don’t need to. Spoon the rest of the batter on top of the cranberries and smooth it out. Bake for about an hour, until the crust is golden and a knife inserted in the top (just to the cranberry layer) comes out clean.
We just keep ours in the refrigerator or the freezer and eat it whenever we have pork. Because it has been boiled with sugar and cranberries have an antiseptic property it keeps for a long time.

Yum! A quick bread that, when sliced, reveals a motherlode of cranberry goodness. Forget about leftover cranberry sauce. I’d make a fresh batch just so that I could bake this bread.

This cranberry bread is just screaming for a hot tea or cappuccino to go with it. I think the cardamon adds a special touch.
Great idea for the leftover cranberry sauce! Personally, cranberry sauce is one of my fave parts of the Tday meal and I’m happy to eat it by the spoonful for the days after π

You can leave it out.Cinnamon or a smaller amount of nutmeg would work too.

Mmm, cardamom in there. I never have cranberry sauce hanging about, but I reckon a quick change of some cooked up apple or pears in there would work just as well. Nice one.
