Patriotic parfaits

Breyer's is the best vanilla ice cream period. Unless you make it yourself

You were probably expecting red, white and blue since it’s the 4th of July. Cut me some slack. Red and blue make purple and this dish is quite purpley. It’s also quite simple, even more so if you skip the shortcake.

Patriotic parfaits

  • 2 cups blackberries
  • 1 cup blueberries
  • 1 cup red wine
  • 1/4 cup brown sugar
  • 1 tsp cornstarch mixed with 1 tsp water
  • 1 tsp cinnamon
  • 2 shortcakes
  • 1 pint or more vanilla ice cream

Bring wine to a boil and whisk in brown sugar. Lower heat to medium and add blackberries, smashing with a potato ricer. Cook until reduced and syrupy. Stir in spices and cornstarch mix. Allow to thicken, which should happen fast. Add blueberries, stir to incorporate and take off heat. Allow to cool.

To assemble: Layer pieces of shortcake, berry mix and ice cream in parfait glasses or bowls. If desired, top with tiny American flags.

    Mm, shortcake, ice-cream and berry, winey goodness – sounds so wonderful – the perfect dessert. Still haven’t been able to get any blueberries so far this season which is starting to annoy me a little! Where do you get the blackberries from? Do you pick them yourself?

  3. Apart from strawberries we donยดt really get soft fruits in Andalucia and I miss them! This has now given me berry cravings as it looks wonderful. Happy 4th July to you both!

    It looks luscious. I am keeping the fruits and wine sauce recipe in mind. It sounds very versatile and the wine must make it taste deeper and more elegant.

    How fun is this! Love the mix of black and blue for the stunning crimson. Do you taste the wine in the dessert or does it just make a nice, mellow reduction for the berries? Very nice. Happy 4th!

    It’s about a billion degrees here, so I made ice cream yesterday. It’s the custard style that has to sit in the fridge over night to volumize and completely chill before churning. I don’t have perfect little parfait glasses like these, but do have some red wine and other ingredients and will give this a try. Happy 4th!

    Ooooh, you got me at wine! How great is that idea!! I love it! A reduced wine sauce, wow, and again, I missed seeing this over the weekend; I would have loved to have made this sauce for my soft serve ice cream!!

  31. I am such a parfait feen sometimes, and I think that’s because I love fruit. Katherine your recipes are starting to rival your husbands now ;). I love this and I’m glad I found this post.

      You’re going to give me a big head. I taught Greg to make sweet tea and stuffing the right way. His family does white bread stuffing, and being from Southern stock you know how unacceptable that is on Thanksgiving. If he could teach me to smoke, can, tend the garden (ha!), make bread and a decent pie crust, I’d only then start to rival him. For now, I’m the happy dessert maker. I do make better chili, if that counts.
