Citrus-glazed chicken

I saw this recipe over at Sweet & Crumby on a day I had chicken defrosting and no plans in store for it. The timing was perfect and so was her post. I made a few tweaks, adding fresh mint, because I have it in abundance. I also used limes, because I had quite a few of these. The recipe is one of her grandpa’s favorites and I understand why. It’s simple and sweet, but not overly so. Thanks, Geni. My adjustments are below, but please check out her site too. It’s well worth the visit.

Orange Glazed Baked Chicken

  • 4 chicken thighs
  • 1/3 cup fresh orange juice
  • 1/3 cup buttermilk
  • 2/3 cup plain bread crumbs
  • Zest from 3 oranges
  • Zest from 1 lime
  • 3 tbsp fresh mint chopped
  • 2 tbsp fresh parsley chopped
  • salt/green pepper

Glaze

  • 1/4 cup melted butter
  • 1/8 cup honey
  • 2 tbsp fresh orange juice
  • 2 tbsp fresh lime juice

Mix zest, breadcrumbs, fresh herbs, salt and pepper in a large bowl. In another bowl mix orange juice and buttermilk. Skin thighs and season with salt and pepper. Let sit 15 minutes and grease a baking dish. Dunk chicken pieces into juice mixture then coat in breadcrumbs. Place in dish and repeat for remaining thighs. Place in oven set to 350 degrees and cook for 20 minutes. Meanwhile melt butter and whisk in juices and honey. Remove chicken from oven. Using a spoon coat each thigh with about 2-3 tbsp of glaze and return to the oven. Bake until browned, about 25 minutes more.

    Darn! I could have used this one earlier. πŸ™‚ We have a recipe for chicken nuggets that we dip chicken in buttermilk mixed with Dijon. The kids love it. And I love that it’s not store bought nuggets. This glaze would be wonderful with it! Yum! Good thought to add some mint too.

    I love the use of buttermilk and orange juice and that glaze is just mmmmmm
    and to top it off they are baked which is healthier and better..

  9. We donΒ΄t get buttermilk here, so am off to research what I could use to replace it. Looks delicious and your beans look lovely too!

    • Better Homes and Gardens suggests for each cup (8 oz or 236 ML) to place a tablespoon of lemon juice or vinegar in a the measuring cup and add enough milk to make a cup of liquid. Let stand for 5 minutes. My wife’s parents do this all the time and she used to too.

        How sad is it that it wasn’t until recently that I even knew you could buy buttermilk? I always just thought it was vinegar and milk (feel free to laugh). I LOVE chicken and buttermilk, so I’ve definitely bookmarked this recipe for future use. πŸ™‚

      • I won’t laugh. My wife always did that trick. I only started buying buttermilk when I started baking lots of bread.

    Same as chicaandaluza, can’t actually buy buttermilk here, but it’s the stuff left over when you shake up cream and make butter yourself, right? (Done that a few times – it’s a lot of fun!) This looks yummy!

  16. LOVE the twist you put on my recipe. The lime and mintage this a bit more exotic and definitely adds another and more complex layer of flavor. Thank you for trying the recipe and for the shout out. Glad it turned out for you. We will be leaving Kauai today (sniff, sniff) and I have certainly been inspired to bale and cook some tropical dishes.
