Depending on which way the wind blows I either like rice mixed into stuffed peppers or I don’t. On the days the wind blows north-northwest, I make this version. When it blows southerly then this one.
When making these either just cut the top off the pepper and fill it up or slice them in half longways and stuff the halves. They do cook faster cut in half.
Stuffed Peppers with Zucchini
- 2-3 large green peppers
- 1 medium small zucchini
- 1 medium small yellow squash
- ½ – ¾ lb ground pork
- 1 egg
- ¼ cup breadcrumbs
- 2 tbsp chopped fresh cilantro
- 1 tbsp chopped fresh parsley
- 1 tbsp red pepper flakes
- 1 ½ tsp turmeric
- Salt/pepper
Mix all ingredients but peppers in a large bowl. Stuff mixture into peppers and place each in a greased baking dish. Place in a 350 degree oven and cook until done, about an hour. Slices of cheese can be melted on the top if desired during the last five to 10 minutes of cooking.
I love the use of zucchini in the stuffing..I usually do the rice mix and pour some tomato juice in the pan…will have to give this version a try..looks yummy
I haven’t often made stuffed peppers – not sure why because they are so yummy. Love the idea of melting cheese over the top.

Love stuffed peppers! All manner of leftovers can be chopped tiny, mixed up with breadcrumbs or rice or cous cous and stuffed into the peppers. Oh, and topped with cheese of course 🙂

I just made stuffed peppers myself the other day (with quinoa instead of rice)…I really like this version with the squash and zucchini in it, not to mention the cilantro and turmeric. I imagine those lend a truly interesting flavor!

I grew up eating Stuffed Peppers. My mother wasn’t a good cook, but she did make wonderful Stuffed Peppers. Her recipe is very simple and full of favor. I make them often when my garden is full of peppers and I freeze cleaned whole peppers so in the off months I can still enjoy them! I will share the recipe on Challengeu2cook and definitely try yours. They look and sound great!
Thanks, I blanch my peppers before freezing them, but I just do that with hot peppers. Great tip.
Nice recipe! Ground turkey also works well in stuffed peppers, but I really like your idea of using pork.
