Cinco de Mayo roundup

All hail the mighty taco

Even if it wasn’t Cinco de Mayo, tacos are always a good idea. Of course nothing goes better with a taco than refried beans, homemade salsa and a margarita. Don’t forget the guac!

I marinated the flank steak in the red burrito sauce for about a day after pounding it out to a ½ thickness. The tacos were topped with fresh corn salsa which is explained below. Depending on what is fresh and on hand this delicious topping can vary quite a bit. I love mixing in black beans when I have some on hand too.

Grilled Corn Salsa

  • 3-4 ears corn grilled
  • 1 green pepper grilled until skin chars
  • 1 small onion cut in half and grilled
  • 1-2 jalapeños grilled until skin chars
  • 2 fresh tomatoes diced
  • 4 tbsp fresh cilantro
  • 1 grilled red pepper *optional*

Cut corn from the cob and put in large mixing bowl. Peel off charred skin from peppers once cooled. Chop everything into small dice. Combine in bowl and season with salt and pepper.

  18. I love the sound of your grilled corn & black bean salsa. It’s making want to rethink dinner that is already in the oven.. I’ll have to wait till tomorrow. I hate waiting…

  19. I am always looking for ways to change it up a bit. This salsa sounds great and really adds the veggies to the taco. I will probably leave out the jalopenos so my younger one will eat it.
