Super Sandwich #1

So good.

This example of an insanely delicious sandwich is courtesy of a dream I had. A dream where I also discovered how to create world peace, end the dependence on fossil fuels, and stop Michael Bay from directing movies. Thankfully, I at least remembered the sandwich.

Pork Awesomeness

  • Roast pork loin sliced thin or Ham
  • Caramelized onions
  • Sautéed mushrooms
  • Cranberry sauce
  • Thick slices cheddar cheese
  • A peperoncini sliced thin
  • Sliced bread
  • Mayo
  • Lettuce

Place a griddle or cast iron pan in the oven and preheat to 365 degrees. Spread a thin layer of mayo over one side bread. Place mayo side down on griddle then assemble sandwich in this order. Layer of cranberry sauce, some pepperoncini, caramelized onion, two pork slices, mushrooms, and cheese. Repeat for other side. Close oven and bake sandwich open faced until cheese melts and mayo fries. Place lettuce in between and fold sandwich together.

If you need to caramelize onions here’s how: Slice an onion paper thin. Place in a large pan with 2 tbsp butter covered in olive oil. Cook on low stirring every so often to keep from sticking for about 45 minutes. Onion is done when deep brown and reduced by almost three quarters.
