More than one way to skin a green tomato

Fresh green tomatoes are hard to get since every one equals one less red juicy tomato.

But when there is a lot of rain perhaps some of the first crop might begin to develop black spots on the bottoms. Picking these off the vine early is the key, and once the bad part is cut away there is normally a good amount of tasty green tomato left.

Or pick some nice green ones, your choice.

Grilled Green Tomatoes

  • 2-3 large green tomatoes cut into thick slices
  • 1 tbsp chopped fresh sage
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 heaping tbsp horseradish
  • Salt/pepper

Mix everything together except green tomatoes. Smear paste onto green tomatoes and let stand 20 minutes. Meanwhile start a fire on the grill. Grill tomatoes, flipping once until cooked through and nicely browned. The time will depend on how hot your grill is. Serve hot.

    I’ve never tried grilling green tomatoes but I bet they are great the way you prepared them. BTW, I hope your tomatoes recover from too much rain.
