Green Bean “Pizza”

Like grandma said: ‘If you don’t eat it today, you’ll eat it tomorrow’

If you didn’t make those green beans in a lemon vinaigrette last week you really need to. They’re even better the second time around. You can use your favorite pizza dough, but the puff pastry makes for a tasty shortcut.

Green Bean Pizza

  • 1 sheet puff pastry
  • 4 ounces goat cheese, at room temperature
  • 1/2 cup shredded ricotta salata
  • 1 cup green beans in lemon vinaigrette
  • black pepper to taste

Defrost the puff pastry and roll out the dough into a large rectangle. Place on a greased baking sheet. Drop the goat cheese in clumps on the dough and then spread in an even layer. If this is tricky, put the baking sheet on a warm oven. Arrange the green beans in pretty rows. Top with shredded cheese and cracked black pepper. Bake at 400 until puff pastry is golden and beginning to brown, about 20 minutes.

    Your Grandma and my Mom were from the same school. This pizza would make a great appetizer — totally unexpected.
