
That’s a big piece of fish
This is an easy and healthy way to prepare and cook salmon. Salmon steaks would work as well as fillets for this.
Baked Salmon with a Bread Crumb Topping
- 1-2 lb salmon fillet
- 1 cup bread crumbs
- 1 lemon
- 1/4 cup white wine
- 5 cloves garlic crushed
- 1/4 cup grated romano
- 2 tbsp chopped fresh dill
- 1 tsp cayenne pepper
- Olive oil
- Salt/pepper
Mix bread crumbs, zest of lemon, dill and cheese in a bowl. Drizzle with enough olive oil so that mixture holds together. In a large baking dish squeeze juice from lemon and mix with olive oil and white wine. Add garlic to pan and coat fish with marinade on both sides. Place fish skin side down and season with cayenne, salt and pepper. Let fish soak in juice for at least an hour in refrigerator. Heat oven to 425 degrees, spread bread crumb mixture over top of fish and press it down evenly. Bake fish until done and top is browned, about 20 minutes. Serve hot from dish.

Haven’t had salmon for a while but it’s always a treat especially with the yummy flavours in your marinade and crumb coating. Is that polenta in the background?

That looks delicious. I was trying to think last week. I was running low on groceries, and it was cold, and I knew I hate salmon, bacon, tomatoes, and rice. I feel like Salmon and Bacon have got to go together somehow. Any ideas?
