I zested 14 lemons yesterday for the limoncello for the holidays. And I have a rotisserie chicken in the frig–this is perfect timing in letting me know what to do with at least one of those lemons. Thanks.

That Spiced Apple Cake looks really good–I have a few of those cute little pyrex containers, so I’ll have to make this in them!
Just lat night a freind was talking about roasting a chicken with lemon & rosemary. Yours here looks about perfect! I need to find me a set of individual-sized baking dishes. They’d make baking so much easier and practical.

I tried roasting my first chicken the other day and the darn oven started acting goofy and not holding temperatures. I’m going to have to try it again. This bird looks too good not to give it another shot – in a different oven perhaps.
Definitely give it another shot!
