Pepper Grit Cakes

So much air in there

These grits are great by themselves or used as a base for all sorts of toppings and sauces. Cheese can also be added inside or on top or both.

Bacon doesn’t hurt either.

Use regular grits, not instant for this.

Pepper Grit Cakes

  • 4 cups water
  • 4 tbsp butter
  • 1 cup regular white grits
  • 1 jalapeno minced
  • 1 red pepper diced small
  • 1/2 cup Greek yogurt
  • Salt/pepper

Bring water to a boil with 2 tbsp butter. Add grits turn heat down to low and simmer stirring until grits are thick and creamy. Season with salt and pepper, then add 2 tbsp butter, peppers, and yogurt and mix well. Grease a suitable sized baking dish and pour in the grits. Bake at 350 degrees until top browns and a knife passes through clean, about 30 minutes. Let cool then flip cake out onto serving dish. Serve hot or cold.

    Still never tried grits, let alone grit cakes! Sounds and looks delicious!

  2. Another unknown ingredient. I only know grits from songs, films and stories. It looks bland but sounds as though it has a real kick in it:)

    I’m not a huge grits fan to be honest, but I can see this being something I might like!

    Grits? Oh, hell yeah. I like the idea of adding the greek yogurt, I’m sure that kicks the creamy factor up a bit. Also, I think the jalapeno lends a great flavor. This looks awesome ——

    I’ve never heard of grits cakes before but the concept does make sense. Look at all the ways polenta is used. Why not grits?

    Oh now this looks darn good! Too bad Mike spilled the canister of grits all over the floor the other evening. LOL. I’ve never seen grit cakes before…love the thought of bacon with them.
