I go to great lengths to avoid mayonnaise. It is a vile creation that resembles many things that should not be discussed on food blogs. There should be a 10,000 percent tax on mayo so I no longer have to see it on store shelves. Of course then it’d be a sought-after commodity and people would trade cigarettes, first-born children and Garbage Pail Kids for it, not necessarily in that order.
Anyway, I don’t really believe in condiment taxes, except maybe on ketchup, which also falls into my gross category unless it’s an ingredient in barbecue sauce. Mustard should be free. It should be given to the masses in all its golden goodness so that every potato salad across the land can be made correctly and I will no longer have to push mayo-coated potato slices around my otherwise empty plate reminiscing on what might have been.
Mustard Potato Salad
- 2 pounds potatoes, peeled, cubed, cooked
- 3 hard-boiled eggs, yolks and whites separated
- 1/4 cup olive oil
- 1/4 cup Dijon mustard
- 1/4 cup buttermilk
- 1-2 tbsp horseradish
- 1/2 tsp red pepper flakes
- 1/2 tsp sriracha
- 1-2 tbsp fresh parsley, chopped
- salt/pepper to taste
Chop egg whites and set aside. Whisk oil and egg yolks. Stir in buttermilk, mustard, sriracha and horseradish. Taste and season as needed, adding salt, pepper and more horseradish if needed. Toss with potatoes in a large bowl. Stir in egg white, parsley and hot pepper flakes. Season with additional salt and pepper if needed.

Does your dislike even extend to homemade mayo? It can be a thing of beauty, although I agree that most commercial ones are vile, odious concoctions. Your mustard and egg potato salad looks delicious! π
Thanks Celia. I haven’t tried homemade mayo, but I am not a big fan of homemade aioli so I don’t think I’d like it either.
I find it strange that you detest mayo, when so many chefs on TV shows use it, ok it is their own home made and not out a jar. However your recipe for the mustard potato salad will definitly be tried in my house…sounds delicious…
We don’t have good cable so the main chefs we watch are on PBS. I don’t recall seeing Lydia or Ming using mayo, but I suppose I would have to forgive them if they did.
I also detest mayo in all but the smallest and most dilute situations… and may still be scarred from a bridemaid’s luncheon I had to attend as a 12 year old where everything but the dessert had mayo. Seriously? In the south, in hot weather? Did she want the wedding to be canceled?
Anyway, I second “Mustard for all.” My fav potato salad has kidney beans and a chili-spiced vinaigrette but my tuna salad must have mustard.
I make my tuna first and then Greg adds all his ingredients to it, including mayo for his sandwich. Love the idea of chili-spiced.
My husband hates mayo also- I will give this a try, thanks!

I think if you make it yourself, mayonnaise has a place and a flavor, but I agree, generally, it doesn’t add much. I love mustard with potato salad!
Totally agree with you on the mayo although I have been know to dip my chips/fries in it, Belgium influence! I like German style potato salad with vinegar and gerkins
Although I don’t share your aversion to mayo, it’s good to lay off of it sometimes. These recipes are great alternatives — and probably healthier, too.
Hahaha.. mayo sure is the scourge of your kitchen.. this sounded like the opposite of an Ode to Mayo. I’d make this recipe any day.. and hold the mayo:)

Hubs could do without mayo but I could get into a bathtub of the stuff. I would love this salad or any of the other suggestions you gave. I could live without mayo – just not happily. π
Gah! Your avoidance of mayo parallels my dislike of mustard. However! I’ve been feeling more adventurous lately, and since I do love potato salad, I may have to make a smaller portion of this salad just to try it.

thanks for the recipe, I’m not a big mayo person myself! I’ve been looking for a great potato salad recipe using dijon mustard, looks like I found it. Perfect for this upcoming Memorial Day weekend!
I don’t quite have the extreme dislike for mayo as you do Katherine; it’s more of a love/hate for me. But dare I say I do love mustard! Particularly Dijon. My mom used to make what she called Russian Pickles; she chopped up regular dill pickles and spooned a good couple of yellow mustard over them and mixed well. It was eaten as a salad or condiment.
I’m not much of a potato eater but if I were I would want my potato salad this way. Very nice.

Nice options. Just pouring a good vinaigrette over warm, slightly broken up, new potatoes works pretty well too. Factory made mayonnaise is not a good thing:)
I outgrew my dislike of mayo a long time ago…my mother eats Miricle Whip (shudder!) instead…
Which type of potatoes? I’ve seen salads made with both russets and the waxy types – which do you prefer?

Most definitely hold the mayo, the condiment I most despise. Then get those hard-cooked eggs out of there and you might have an edible potato salad.
That’s what we strive for… edible.
I like mayo too, especially the real home made version and I could live on allioli, though not out of a jar. My strong dislikes are for Salad cream and Miracle Whip – I hate the sweetness.
The mustard potatoes look quite delicious (though they do contain the ingredients of mayo + extras). Sriracha seems to go with everything π

Oh, my lost twin sister! I KNEW that a lady who does P90X had to have excellent taste – I am anti-mayo by definition, it is a vile concoction indeed. I hate the texture, the taste, the oily nature, the…. you name it, I dislike it. And Phil is just like me, so we marry the right person.

I’m surprised to see that so many people have a strong dislike for mayo. I like it and mustard. As a matter of fact, I use both in my potato salad. You have given some great options for all those mayo haters. I’m sure I would enjoy your mustard version.
Too much good stuff here–everything looks deeeelicious. Who needs mayo when you’ve got all of those other fantastic ingredients? I’d be just fine without it. π

Mmm mayo π Mustard-based potato salads are awesome, though I don’t think they can ever top a good crΓ¨me fraiche/mayo blend! Love the look of the salad – is the sriracha flavour in this strong? I’ve really gone off the stuff recently so don’t want to get blasted by its flavour!
I’d never give up my Garbage Pail Kids for anything. While I don’t share your distaste (hatred?) for mayo, I do like using mustard as much as possible. That’s a great potato salad. And it’s even got eggs, yes!!

It seems as though no one is ever on the cusp of liking or not liking mayo. It’s extreme love/hate. I will lick it off of utensils, for example. To push you over the edge, a friend of mine mixes mayo and ketchup and dips her Chick-Fil-A nuggets in the pink concoction. Anyway, I would gladly eat this potato salad despite its lack of mayo. π
